- 2 piece eggs
- 450 g coconut milk
- 2 level teaspoons natural vanilla extract
- 450 g self-raising flour
- 65 g caster sugar

- Depending on how you like your consistency, add or take 50g of Coconut milk.
- "Blend" 30 seconds on 7 and check the consistency. "Slow Cooking"
- "Blend" 30 seconds again if added more coconut milk. "Slow Cooking"
- Use a soup spoon to get mini sized pancakes for lunch boxes. Wait for the bubbles before flipping. I double the recipe and freeze left overs for lunch boxes.

Add more coconut milk if too gluggy.
