Ingredients
- 3 banana's
- 125 grams rolled oats
- 450 grams Wholemeal Self Raising Flour
- 2 teaspoon baking powder
- 135 grams brown sugar
- 150 grams Butter
- 375 grams Light Milk
- 10 grams Vanilla Bean Paste
- 150 grams dried apricots
- Baking paper
- 2 loaf tins

Preheat oven 180* celcius. Lightly spray both loaf tins and line with baking paper.
Pop the dried apricots in bowl and chop for 10 seconds/ speed 5/ MC on. Put aside in a bowl. There is no need to wash the bowl during this recipe.
Put banana's peeled into the bowl and blend for 10 seconds/ speed 4/ MC on. Place aside in the same bowl as apricots.
Place the rolled oats, wholemeal self raising flour, baking powder, brown sugar, butter, light milk, vanilla bean paste in the bowl and combine for 30 seconds/ speed 4/ MC on.
Return the apricots and banana that's been set aside into the bowl and stir 30 seconds/ speed 4 "Counter-clockwise operation" using the spatula to assist with stirring if necessary.
Separate into the two loaf tins evenly and place in oven for 40-45 minutes or until a wooden skewer comes out clean. Leave the loaves in the tins until slighly cooled (10-15 mins) before slicing.
Cut each loaf into 8 pieces (there will be 16 overall).

Tip
I place the individual portions into ziplock bags and pop into the freezer.
These are great if you're time poor in the mornings.
I microwave it for 40 seconds if wanting to eat warm.
We sometimes add a teaspoon of cinnamon to the recipe for that extra yumminess!

Tasty, but Im not a fan of wholemeal so i used regular SR flour and it came out a bit crumbly.
Love eating this on the run whilst I'm driving the kids to school.
