- 2-3 ripe bananas
- 320 g self-raising flour
- 370 g Milk, (of your choice)
- 2 tsp baking powder
- 2 eggs
- yoghurt, (optional - for serving)

- 1. Place blueberris and sugar into the mixing bowl and heat 8min/120'/speed 1, then mix for 3-8 seconds/speed 5 (to desired consistency). Place in a serving jug & set aside.
2. DO NOT CLEAN THE BOWL. Put the remaining ingredients in the mixing bowl & mix for 30 seconds/speed 4. Scrape down the sides of the bowl and mix for a few more seconds if required to reach the desired consistency (smooth or with banana lumps).
3. Place a large non-stick frying pan over medium heat. Place a little butter or oil into the pan & allow to melt. Place 1/4 cup scoops of pancake batter into the pan. Cook until bubbles appear on the surface and tehn flip to cook the other side until lightly golden.
4. Stack 3 x pancakes on each serving plate and top with berry coulis and a dollop of yoghurt.
5. Enjoy your breakfast!

This recipe makes plenty of pancakes for breakfast & some left over batter to make pikelets for school lunches.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
