Ingredients
Muffins
- 160 g white rice (of choice)
- 140 g almonds
- 100 g Hazelnuts raw
- 2 tbsp GF Cornflour
- 1 tsp xanthan gum
- 1 tsp salt
- 2 tsp baking powder
- 200 g Rapadura Sugar
- 4 eggs, Separated
- 2 tbsp Coconut oil (or oil of choice)
- 1/4 tsp creme of tartare
- 4 large bananas, cut into pieces
- 100g chopped chocolate and pecans, for sprinkling over the top

Preheat oven to 180 degrees, add patty cases to muffin pans or silicone moulds, or grease with extra oil.
weigh rice into TM bowl and mill 1 min speed 10, add almonds and Hazelnuts and mill a further 10 seconds speed 9. Add remaining dry ingredients except for the sugar and mix on speed 5 for 20 seconds. Set aside
Clean and dry bowl thoroughly (water and egg whites do not get along)
Place Butterfly onto TM blades, add egg whites and 1/4 tsp Creme Tarter, process into soft peaks for 3 mins, 37 degrees speed 4 with the MC off. Add the sugar, egg yolks, oil and cut up bannanas and mix speed 5, 30 seconds. Add the dry ingredients back to the bowl and mix 20 seconds speed 5 or untill combined.
Spoon into Muffin tins or silicone moulds, sprinkle with chopped chocolate and nut mixture or with flaked Almonds, and place into oven to cook for 23mins, untill golden.

Tip
In preparation of egg whites alway have a very clean and dry bowl, use a hot water wash with a little vinegar, 4 mins 70 degrees speed 4. Make sure bowl is dry, use turbo to get extra moisture from blades.
Can be made into a loaf, increase cooking time to 1 hour, test with a skewer, cover top of loaf with foil half way through baking.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
