  • 300 grams SR flour
  • 215 grams caster sugar
  • pinch salt
  • 120 grams marg or very soft butter
  • 2 eggs
  • 185 grams Milk
  • 1 tsp vanilla bean paste/extract

Recipe's preparation

  1. Preheat oven to 175 degrees.
  2. Insert butterfly into a clean dry bowl.

    Add flour, sugar and salt and 'sift' for 10 secs/speed 2.
  3. Add all margarine (or soft butter), eggs, milk and vanilla.
  4. Mix for 10 secs/speed 1, till just combined.
  5. Increase to 20 secs/speed 3.
  6. Increase again to 20 secs/speed 4. (remember, no higher than speed 4 with the butterfly)
  7. Scrape down sides and mix for the last time 20 secs/rev/speed 4. I like to do a reverse to move things off the blade and butterfly.
  8. Mixture will be too thick to pour, so spoon into muffin/patty cases. Just be careful scraping a metal spoon inside your bowl. I often pour all the mixture into another bowl that I can scrape to my hearts content. Kinda defeats the purpose of one bowl cooking…but sometimes you just have to.
  9. I use muffin papers, little patty pans just aren’t big enough these days for my growing boys…but if you use traditional 'patty' papers, you will make at least 24. Fill each case about 2/3 full. It will make 15-18 muffin size cakes, depending on how thorough you are with scraping out the bowl.
  10. Bake for 10-15 minutes or until risen, golden and firm to the touch. Cool on a wire rack and ice however you choose.

Tip

Just a little note: I know marg is not great, but I grew up on it and while I predominantly use butter now, there are some things that are just better with marg and these cupcakes are one. I promise to try one day and sub in nice room temp butter for marg, but I worry they won’t be as light as these ones are, so for now….your choice
