Dough
- 270 g buttermilk, use homemade one, or just water
- 1 tsp Coconut sugar
- 1.5 tsp dried instant yeast
- 450 g Baker's Flour, all purpose works as well, for a non-wheat alternative use spelt
- 1.5 tsp sea salt
- 15 g Butter
Filling
- 100 g Coconut sugar
- 110 g Butter
- 2-4 tsp ground cardamom
Glaze
- 0.05 l Maple syrup, use high quality maple syrup

- Place buttermilk, sugar, yeast, flour, salt, and butter onto mixing bowl, then knead
"Dough mode" /6 min
- Transfer dough onto a lightly floured work surface, silicone mat, or greased bowl. Cover and set aside to proof in a warm place for 30-60 minutes.
- Add sugar, butter and ground cardamom to mixing bowl and blend 30sec/speed4 until smooth.
- Roll proofed dough into rectangle, approx. 1.5-2cm thick.
- Spread filling evenly onto dough, leaving about 3cm across the long edge free.
- From one long edge, start rolling dough into log shape towards the other long edge. Start from the edge where the filling is spread all the way to the rim.
- Once your dough is rolled up into a log, make sure the long edge is sealed properly. Using a sharp, slightly wet knife, or floss (make sure to use unflavored floss), cut the dough into ca. 8 pieces.
- Stretch each piece to create more length and then twist in itself and into a round knot.
- Place knots onto baking tray lined with parchment paper. Make sure to leave room in between - the buns will. grow during second proofing and baking.
- Preheat oven to 180°C (fan).
- Cover baking tray and let buns sit for another 15-30 minutes, until they have visibly risen.
- Bake buns until golden brown, approx. 30 minutes. Take out of the oven and let cool.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
