Ingredients

Chia Seed Cake

  • 100 g chia seed
  • 250 g water
  • 90 g Raw Cacao
  • 200 g Butter
  • 10 eggs
  • 350 g almonds
  • 180 g Coconut sugar
  • 1/4 tsp salt
  • 2 tsp Bicarb of soda (baking soda)

Rich Chocolate Ganache

  • 600 g dark chocolate
  • 320 g cream
  • 200 g Butter
  • 1/4 tsp salt

Recipe's preparation

    Chia Cake
  1. Place Chia Seeds in a bowl add water, stir, let it rest for 15 mins or until chia seeds have absorb all the water and has broken down to jelly consistency.

  2. Place Almonds in TM Bowl, Chop 10 secs / Speed 8, set aside

  3. Preheat oven to 180C and line two spring form cake tins (22") with baking paper.

  4. Place all remaining ingredients in TM Bowl, Mix for 5 secs / Speed 7.

  5. Add Chia seeds, Mix for 10 secs /  Speed 7.

  6. Divide mixture into the 2 spring form cake tins.

  7. Bake for 35 mins to 40 mins. Check that the cake is cook with a cake skewer, insert skewer into the center and it should come out clean.

    Remove cakes from cake tin and allow to cool on cake racks.

  8. Rich Chocolate Ganache
  9. Place chocolate in TM Bowl and Chop for 1 sec / Turbo, repeat until fine.

  10. Add Butter, Cream and Salt, Temper for 3 mins / 50C / Speed 2 -3.

  11. Place mixture into fridge to set for 1 hour.

  13. Assembling the cake
  14. When you are ready to assemble the cake. Whip ganache for 10 secs / Speed 6. Until smooth, light and fluffy

  15. Cut and split the cakes into half so you end up with 4 cakes.

  16. Place the first half of the cake onto a dish, spread ganache over each layer, repeat until all 4 layers are done. Finish by spreading ganache around the sides.

  17. Garnish with Chocolate shavings.

Tip

Allow time to set the Ganache.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This is an awesome recipe! It's light, gluten free and the chia seeds make it a bit crispy and crunchy. I added a tsp or two of vanilla and used part stevia / part regular sugar. A real winner and one of the best gluten free cakes I've ever tasted.
