Ingredients
- 250 g Butter
- 1 tsp vanilla essence
- 165 g caster sugar
- 165 g brown sugar
- 1 egg
- 300 g plain flour
- 25 g cocoa powder
- 1 tsp bicarb soda
- 25 g Shredded coconut
- 50 gglace cherries
- 200 g dark chocolate, pieces
- 200 g milk chocolate, pieces

Preheat oven to 180C – 160C fan forced. Line oven trays with baking paper.
Place raw sugar in TM bowl and mill for 5 seconds on speed 9. Set aside
Place dark chocolate in TM bowl and set dial to lid closed position, press turbo button for a second or so to roughly chop dark chocolate. You may need to repeat this a couple of times. Set aside then place milk chocolate in TM bowl and repeat above process. Set aside with dark chocolate.
Place glace cherries in bowl and set dial to lid closed position, press turbo button for 1 second, set aside with chocolate.
Place butter in bowl (if butter not at room temperature) set timer for 30-40 seconds at 60C on speed 3. Add sugars, vanilla and egg and mix for 1 minute on speed 5.
Add flour, cocoa and bicarb soda into TM bowl and mix for 30 seconds on speed 5. Scrape down sides of bowl and mix for a further 5-10 seconds on speed 5.
Add coconut, cherries and chocolates and mix for 30 seconds on reverse + speed 5. Use your spatula to help incorporate ingredients.
Roll level tablespoons of mixture into balls, place approximately 5cm apart on trays, flatten slightly with fork. These are large cookies and will spread a lot.
Bake for 12 minutes or until set. Cool on trays.
Tip
I only put 6 on a rectangle tray otherwise they spread and join.
