Chocolate Chilli Muffins

  • 375 grams Self Raising Flour
  • 1 tablespoon baking powder
  • 50 grams cocoa powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried chilli flakes
  • 85 grams caster sugar
  • 2 eggs
  • 375 grams Milk
  • 40 grams sunflower oil
  • 10 grams vanilla extract
  • 70 grams dark chocolate
  • 70 grams milk chocolate
  • 100 grams chocolate chips

Recipe's preparation

    Making the Muffin!
  1. Preheat the oven to 180°C (fan forced) 200°C and prepare paper muffin cases.

  2. Add the flour, baking powder, cocoa, cayenne pepper, chilli flakes and sugar into Thermomix bowl. Closed lid"Closed lid"
    20 sec / speed 4 Transfer to spare bowl.

  3. Add eggs, milk, oil and vanilla. Closed lid"Closed lid"
    15 sec / speed 4

  4. Add the dark and milk chocolate to the mixture.
    4 - 5 min / 45°c / 1.5 / reverse Counter-clockwise operation"Counter-clockwise operation" until chocolate has melted.

  5. Insert whisk attachment. Add the dry ingredients and 50g chocolate chips.
    15 sec / Speed 2 or until mixture combined.

  6. Place the mixture in the muffin cases and sprinkle with the remaining chocolate chips. Place in the oven for 20 - 25 minutes until well risen, or 10 minute 180 degrees in an Airfryer

  7. Remove from the oven or Airfryer (10 mins) and allow to cool.

Tip

Adapted for Thermomix from The Crispy Crouton, Helen Brass.
Omit cayenne pepper and dried chilli flakes for fresh chilli. Remove the seeds if you don't want the muffins super spicy!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
