Ingredients

General's crumbed cheese and pasta squares

  • 1600 grams water
  • 125 grams macaroni
  • 20 grams Butter
  • 15 grams flour
  • 180 grams Milk
  • 75 grams Grated Tasty Cheese, If you like it strong, try extra sharp vintage cheese.
  • 75 grams Parmesan cheese
  • 1 --- egg
  • 100 grams panko breadcrumbs, You will probably need more.

Recipe's preparation

    Pasta preparation
  1. Add 1600g water into bowl and add simmering basket.

  2. Preheat water to 100 degrees. (I boil the kettle to save time).

    Place simmering basket into Closed lid"Closed lid" and then the pasta.

  3. Boil 7 min / 100 / Sp 4 (or until al dente)

  4. Place the spatula in half way through cooking to loosen pasta, and remove MC.

  5. Remove simmering basket and let water drain. Set aside.

  6. Preparing slices
  7. Add butter (20g) 2 min / 90 / 1

  8. Add flour (15g) 2 min / 100 / 2.5

  9. Add milk (160g) 7 min / 100 / 2.5

  10. Add grated cheese (75g) and parmesan, salt and pepper 1.5 / 90 / 3

  11. Add pasta (you may need to seperate it a little) 2.5 min / 80 / 2 Counter-clockwise operation"Counter-clockwise operation" reverse

  12. Spread mixture onto greased and lined tray and place in fridge until firm. Approx. 4 hours.

  13. Cooking
  14. Place flour into small bowl.

  15. Whisk one egg and 1/3 cup milk with fork in another bowl.

  16. Add panko breadcrumbs in a third bowl.

  17. Remove macaroni and cheese from tray and place onto a board.

  18. Cut into even slices, cubes or triangles.

  19. Dip each portion in to flour, then the egg wash followed by the panko crumbs.
    (Use one hand for the flour only, and your secind hand for the egg wash and crumbs).

  20. Shallow fry until each side is golden OR place in an Airfryer at 180c for 15 mins or until golden brown.

This recipe has been adapted from the 'mac n cheese bites' via taste.com.au.

I served it with some homestyle tomato chutney and Kewpie mayonnaise (Japanese mayonnaise), which can be found at an Asian grocer.

Works well as an entree or a side to a main meal.
