Ingredients
Chocolate Chip Muesli bars
- 50 g Butter, room temperature, Cubed.
- 50 g brown sugar, or raw sugar
- 60 g golden syrup or honey
- 1 level tsp Vanilla Bean Paste
- 1 pinch salt
- 230 g rolled oats
- 50 g rice bubbles or rice puffs
- 100 g chocolate chips, can sub for dried fruit if preferred

- preheat oven to 170°C and grease and line a slice tray (20cm x30cm)
- Add rolled oats to mixer bowl and chop speed 3 for 5 seconds, set aside.
- place the butter, sugar, golden syrup, salt and vanilla into the mixer bowl and cook for 4 minutes, 90°C speed 3
- add the oats and the puffed cereal into the bowl and stir "Counter-clockwise operation" speed 2 using the spatula to help mix untill combined.
- allow to cool a moment and then press into the pan using a wet measuring cup to press down. add the chocolate chips on top and press in to the bars. Bake in preheated oven for 20 minutes or untill browned.
allow to cool in fridge before cutting.
keeps for a week in an airtight container in the fridge

mix up flavours- use cocoa pops for a chocolate version! use white choc and regular choc chips or dried fruit of choice! add nuts or whatever you like! dairy free spread works well or coconut oil!
