Ingredients

Sponge

  • 10 g Dry active yeast
  • 110 g Luke Warm Water
  • 80 g bakers flour

Dough

  • 255 g Roasted Sweet Potato, roughly one sweet potato. Roast potato in skin until soft. cool then peel.
  • 15 g Pure Maple Syrup, can use honey
  • 1 teaspoon salt
  • 1 large egg
  • 50 g soft butter, or dairy free spread
  • 500 g bakers flour

Glaze

  • 1 egg white
  • 2 tablespoons water
  • Sesame or poppy seeds, to sprinkle

Recipe's preparation

    Sponge
  1. Describe the preparation steps of your recipe

  2. 1. add yeast, Luke warm water and 80g of bakers flour to Closed lid"Closed lid" mix for 40 seconds on speed 3. 

    2. let the sponge sit for 15 minutes to allow the yeast to activate and bubble

  3. Dough kneading
  4. 1. add sweet potato, maple syrup, salt, egg, butter and flour to the Closed lid"Closed lid"

    2. mix for 30 seconds speed 3

    3. Dough mode"Dough mode" knead for 6 minutes. you should have a nice springy dough not to sticky! 

  5. 1. Roll out dough on thermomat or lightly floured surface into a rectangle

    2. using spatula cut dough into 16 peices

    3. roll peices into balls

    4. flatten the balls into discs and fold over into balls and re flatten again

    put a few centrimetres apart on a lined tray and place in a turned off oven to prove for 45minutes 

  6. Glazing and Baking
  7. 1. Remove proved rolls from oven, and preheat oven to 200c

    2. using a fork mix eggwhite with water. 

    3. brush on top of rolls and sprinkle with sesame seds or poppy seeds. 

    4. Bake rolls for 15 minutes or untill slightly golden on top. 

    5. If you can, wait until they have cooled slightly before eating!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    Delish. Easy to make. I substituted the maple syrup with Rice malt syrup and use sunflower seeds on top.

    I had left over roasted sweet potato, so thought I'd give this recipe a crack. The rolls turned out perfectly! Nice and fluffy, slight sweetness, and still tasted great the next day.
