Ingredients

Cake

  • 1 zucchini
  • 2 eggs
  • 20 g chia seeds
  • 60 g Nuttlex
  • 60 g honey
  • 20 g raw cacao powder
  • 1 teaspoon baking powder, Gluten free
  • 20 g Coconut Flour

Coconut ganache

  • 80 g dark chocolate
  • 60 g coconut cream

Recipe's preparation

    Chocolate Zucchini Cake
  1. Chop zucchini 1 second / speed 6

     

    Scrape bowl and chop two more times, scraping between each chop.

     

    Add eggs and chia seeds then mix for 3 seconds / Counter-clockwise operation"Counter-clockwise operation" / speed 3

     

    Add Nuttlex, honey, cacao, baking powder and coconut flour and mix to combine for 6 seconds/ Counter-clockwise operation"Counter-clockwise operation" / speed 5 or until combined.

     

    Pour into lined cake tin and bake for 50 minutes / 180 degrees

  2. Coconut ganache
  3. Place chcolate in bowl and grate for 10 seconds / speed 9

     

    Add coconut cream and melt for 4 minutes / 80 degrees / speed 2

    These were good but I couldn't get it to set and then it just crumbled.  I just used coconut flour so next time I'll add a bit of gluten free flour.

    I used butter instead of nuttelex and added 35g of SR flour due to other's comments it was too moist.  I didn't mean to add this much but they turned out fine.  Cooked for 20mins as large muffin size.  WIll cook again and this is a healthier alternative to normal chocolate cakes.  My son ate 3 mini muffins within about 5 minutes!!!

    Just finished making this cake. Tasted fine even though I forgot to put the honey in! Did find it a bit too moist... I ended up doing half coconut flour and half normal SR flour. Wonder if less Zucchini and more flour might do the trick next time. Put the EDT Ganache over the top and tastes great!
