Ingredients

Double Chocolate Hot Cross Buns

  • 250 g Milk
  • 1 tbsp dried yeast (14g)
  • 500 g bakers flour
  • 70 g Butter
  • 50 g sugar
  • 2 tsp salt
  • 1 egg
  • 2 tbsp cooking cocoa
  • 150 g milk choc bits

Piping Mixture

  • 80 g plain four
  • 1 tsp olive oil
  • 1 pinch salt
  • 100 g cold water

Sugar Syrup

  • 2 tbsp water
  • 2 tbsp sugar

Recipe's preparation

    Hot Cross Buns
  1. Pre heat oven to 220 degrees Celsius and prepare a greased deep baking tray.


     

  2. Place milk and yeast in TM Bowl and mix 3 minutes, 37degrees, speed1

  3. Place remaining ingredients (except chocolate bits) in TM Bowl and mix for 6 seconds, speed7

  4. Set to closed lid position and Knead for 3 minutes, interval speed.

  5. Add choc bits and mix for 20 seconds reverse speed 5

  6. Turn dough onto floured bread mat and hand knead for a few seconds

  7. Cover and leave to prove in a warm place for 45-60 mins, or until double in size

  8. Cut and shape in dinner roll size buns and place together on a greased baking tray.

  9. Prove in a warm place while you make the piping mixture.

  10. Piping Mixture
  11. Place all in TM Bowl and mix 30seconds on speed 4.

  12. Pour mixture into piping bag (or sandwich bag with a very small corner cut off) and Pipe crosses onto buns

  13. Bake in oven for 15-20mins or until golden.

  14. Sugar Syrup
  15. Place ingredients in TM Bowl and cook 2 minutes, 100degrees, speed 4

  16. Brush with hot sugar syrup while warm.

  17. Allow to cool on a tray for 5 minutes before transferring to a wire rack.  Serve warm or allow to cool completely before placing into an airtight container to store until ready to serve.  Serve fresh or toasted with butter.  Can be frozen.

Tip

Replace the milk choc bits with white or dark if you wish

    I made these twice and they tasted just OKAY hot, but once cooled were so hard and tasteless.  Disappointing

    I made these today out of all the other hotcross bun recipes I researched, as I have a fusspot also. They were easy as  and pretty yummy.  I used dark choc and omitted the cross as my kids don't realky like it.  They were a bit dry so instead of cooking for 20 mins might back that off a bit.  Will definitely add to my recipes

    Made these today for my chocolate mad children based on the EDC hotcross buns, but without any cinamon etc like other recipies which my piccy son would not like! tmrc_emoticons.p   They were very nice and the whole family loved them! tmrc_emoticons.)  Just as easy to make as the regular EDC hot cross buns!
