Easy Peasy Chocolate Cookies
- 125 g Butter, softened and chopped into pieces
- 160 g brown sugar
- 1 egg
- 240 g plain flour
- 2 level tbsp cocoa powder
- 140 g White Chocolate Chips

- Preheat oven to 180°C.
Line two baking trays with baking paper and set aside.
Place butter and sugar into mixing bowl and mix 10 sec/speed 5.
Add egg and mix 10 sec/speed 5. Scrape down sides of mixing bowl with spatula.
Add flour and cocoa powder and mix 20 sec/speed 5. Scrape down sides of mixing bowl with spatula and repeat if needed.
Add chocolate bits and mix 10 sec/"Counter-clockwise operation" /speed 3.
Form dough into walnut size balls and place them 5 cm apart on prepared baking trays. Flatten slightly.
Bake biscuits for 15 mins (180°C) then allow to cool on wire rack before storing in a sealable container.
