Ingredients

  • 40 g Parmesan cheese, cut into cubes (3 cm)
  • 1-2 garlic cloves
  • 1 leek
  • 5 sprigs Thyme, leaves only
  • 30 g extra virgin olive oil
  • 500 g chicken thighs, trimmed and cut into pieces (2 cm)
  • 100 g white wine
  • 1300 g water
  • 1 tbsp chicken stock paste
  • 30 g flour
  • 300 g thickened cream
  • 100 g carrot, cut into thin strips using a peeler (like tagliatelle)
  • 0.5 broccoli, broken into small florets
  • 30 g Baby Spinach Leaves
  • 1 tsp salt
  • 200 g pasta, (e.g. macaroni elbows, fusilli)

Recipe's preparation

  1. Place Parmesan cheese into mixing bowl and grate 5 sec/speed 10. Transfer into a bowl and set aside. Rinse and dry mixing bowl.

     

  2. Place leek and garlic into mixing bowl and chop 3 sec/speed 6. Scrape down sides of mixing bowl with spatula.

     

  3. Add thyme and oil and sauté 3 min/100oC/Gentle stir setting"Gentle stir setting" .

     

  4. Add chicken, wine, 100 g of the water and stock paste and cook 15 min/100oC/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" . Scrape down sides of mixing bowl with spatula.

     

  5. Add flour, cream, carrot and broccoli and cook 6 min/100oC/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" .

  6. Place spinach leaves into ThermoServer and pour chicken and sauce over it to wilt the spinach. Stir through reserved grated Parmesan cheese using spatula.

     

  7. Without rinsing mixing bowl, place remaining 1200 g of the water and salt into mixing bowl and cook 10 min/100oC/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" .

     

  8. Add pasta and cook according to packet directions (I cooked for 11 mins)/100oC/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" , without measuring cup.

     

  9. Transfer pasta to simmering basket to drain and rinse then add to reserved chicken and sauce in ThermoServer and stir to combine. Serve warm.

     

Tip

Simple, kid friendly (well for ours any way....) and oh so adaptable!!

    I used milk because I had no cream, still very yummy but I should add more flour to thicken. Otherwise using cream would be thick enough.
    A+ with my boys in the house. A definate keeper.
    Oh,,,, Lots of Salt n Pepper had to be added tmrc_emoticons.)

    Made this tonight with GF Rice Vegeroni, Lactose Free light cream and GF plain flour. Omitted the Parmesan and sprinkled with lactose free grated cheese. Delish! Kids both had seconds!

    Whole family ate this! Including 1.5 year old and 7 year old.  Very impressed with the all in one pot approach. And I liked using carrot ribbons instead of just chunks of carrot because it definitely made it more appealing to everyone.

    I used an onion instead of a leek. And although I used sprigs of thyme this time, I probably wont worry about it or will just use a little dried thyme next time if I've run out.

    The beauty of this recipe was that I could make it before school pickup, and by the time we finished after school activities and made it back home, the casserole was ready to eat straight from the thermoserver.  Definitely a winner on a cold day.

    Omited the wine as we haven't got any, just added 50g extra water. Only had 150g light sour cream, added a dash of milk, no brocolli, 2 frozen blocks of spinach and added left over roast chicken near the end. So yummy! I bet it tastes even better if you stick to the recipe. Will make again for sure.

    This was delicious. I used onion instead of leek and left out the thyme. I always use GF pasta which takes less time to cook, so cooked this on the stove at step 5 - this saved heaps of time. I also did extra carrot and zucchini ribbons and corn instead of broccoli. You can actually use whatever veg you like. The family loved it.

    This is a hit with my 2 young boys (& me), thank you for the recipe. i substituted cream for natural yoghurt and added an extra 100g carrot - delicious. Ive already had a request for it again.  tmrc_emoticons.)
