Ingredients
Salad
- 70 grams raw walnuts
- 1-2 cloves garlic
- 3 sprigs parsley
- 80-100 grams sun-dried tomatoes
- 150 grams quinoa
- 500 grams water
- 20 grams stock concentrate either veg or chicken
- 2 sticks celery stalk, halved, thinly sliced
- 1 lemon or lime, juice to taste
- 150 grams feta cheese, crumbled
- salt and pepper to taste

Place walnuts in dry TM bowl and roast for 10 minutes, Varoma temperature, speed soft. Once walnuts are cooked, "Closed lid" Turbo, 1-2 seconds until roughly chopped. Set aside (you may like to use these as a garnish otherwise add to the salad bowl).
Place garlic cloves and parsley in TM bowl and chop for 3 seconds, speed 7. Set aside in the salad bowl.
Place sun-dried tomatoes in TM bowl and chop for 3 seconds, speed 6. Add to garlic and parsley in the salad bowl.
Measure quinoa, water and stock in TM bowl and cook for 25 minutes, 90oC, "Counter-clockwise operation" speed 2.
While quinoa is cooking, slice celery and add it to the salad bowl with lemon or lime juice, salt and pepper.
Add cooked quinoa to the ingredients already in the salad bowl and toss to combine with the crumbled feta. Top with walnuts.

Tip
This salad could be served hot or cold.
And naturally you can add additional ingredients such as sweet corn kernels, thinly sliced carrot, broccoli...
I'm just serving it up with some leftover cooked chicken.

My dinner party guests loved this and so did I. Will definitely make again.. I did double the quinoa though as it looked so little quantity in my salad bowl!!

really enjoyed this dish but unfortunately my quinoa didn't work. First time making Quinoa in the TM and had same problem, too much water, so I kept it going and ended with mush. Re did the quinoa on the stove and added it to the rest of the ingredients plus chicken. Very nice
For those that are having trouble with the quinoa, I always find soaking them overnight before using them in recipes helps a lot with reducing cooking time. Just weigh the amount you need in a jug and cover with water, leaving them overnight on the bench or somewhere out of the way. Might be worth a try.
I feel awful I posted a recipe that didn't work for others and I'm hoping you'll have more success (if you try again) since I have edited.
I've cooked this dish again because in all honesty I can't remember what I did after cooking the quinoa (and my result). After 17 mins I had water left too so would have had to drain and although quinoa was cooked, it had a slight crunch. I cooked for further 8 mins (total 25 mins) and water absorbed and quinoa much softer.
I'd be very interested to hear feedback on cooking quinoa from others. Obviously I'm not an expert but still enjoyed this dish personally.
oh and this time I added steamed asparagus and baby spinach.

I just tried to make this salad but the quinoa was still full of water, way too much liquid. Did I miss something?
Oh yey Amy, so pleased you enjoyed this salad. I was secretly excited about it too and ooh, might have to try making it again and serve it with some fish. Wishing my 2 year old daughter would give it a chance but at least it got my hubby's approval too. Thanks

this dish was a huge hit. My husband was critical of quinoa and this was the first quinoa based dishes I was able to get him to try. I served it with snapper steaks, which went beautifully with the salad. Even my 2 year old daughter loved it! I'm looking forward to enjoying it more over the warmer months.
