Ingredients
Fairy cakes
- 90 g sugar
- Rind of 1 Lemon
- 125 g Butter
- 60 g Milk
- 2 eggs
- 230 g plain flour
- 1/2 tsp bicarb soda
- 1 tsp cream of tartar
- 170 g sultanas
- 1/2 cup Jam, raspberry or strawberry (optional)

- Preheat the oven to 190°C.
Place cupcake liners into 12 muffin cases. or grease the muffin pans well.
1. Blitz sugar and rind sp9/5 secs. Scrape.
2. Add remaning ingredients (except for the sultanas), sp4/ 20secs.
3. Add sultanas, sp3/"Counter-clockwise operation" /5-10 secs or until combined.
4. 2/3 fill each case with mixture, add a spoon of jam and cover with mixture.
5. Bake for 15-20 mins or until cooked when tested.
Sprinkle the tops with a little extra sugar if you like.

I thought the jam was a lovely addition and the cakes rose beautifully in the oven however, my cakes were really dry. A little disappointed because they looked so nice.
Very delicious, love the jam inside, I used a few different jams and will be making these fairy cakes a lot. They are so quick & easy.
