Ingredients
Muffins
- 30 g quinoa grains
- 10 g chia seed
- 210 g Gluten Free plain flour (or normal flour if not GF)
- 2 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon Nutmeg
- 3 eggs
- 200 g yogurt (i use plain greek yogurt)
- 65 g oil (neutral or nut flavour)
- 150 g Rapdura or brown Sugar
- 120 g EDC apple sauce or apple puree
- 25 g dried cranberries or sultanas

mill quinoa and chia seeds 30 sec / speed 9
add flour, spices, sugar and baking powder and mix 5 secs / speed 2-3
add eggs, yogurt, oil and apple sauce and cranberries/sultanas and mix gently
REVERSE / 10 sec / speed 3 - until just combined.
bake 180FF in greased muffin tins
15 mins for mini muffins (makes approx 30) or 20-25 mins large muffins (makes approx 12)
Muffins
Tip
add extra 30g sugar or liquid sweetener or 1 tablespoon vanilla extract for extra sweetness.
These can be made with normal flour if you are not Gluten Free and 40g extra flour can replace the quinoa and chia.
The quinoa and chia give the muffins a nutty flavour while still being nut free and perfect for kids lunchboxes.
These freeze really well.

I made a dairy free version of these. I used 100g almond milk in place of the yoghurt. I also used pepitas in place of quinoa, added 100 grams of sultanas, used coconut sugar instead of rapadura & allspice instead of nutmeg...turned out really well. kids loved them
