Ingredients
GF Carrot Cake
- 1 tablespoon Butter, softened
- 50 grams walnuts
- 250 grams carrots, roughly chopped
- 210 grams macadamia oil
- 200 grams sugar raw
- 3 Eggs.
- 220 grams GF flour blend, I use Quirky Jo's recipe
- 1 1/2 tsp GF baking powder
- 1 1/2 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp xanthan gum
- 1/2 tsp gluten free bi carb soda
Cream Frosting
- 250 grams Philly cream cheese, softened
- 100 grams sugar raw
- 1 tsp Vanilla Paste
- 30 grams Milk

Preheat Oven to 180. Grease 20cm springform cake tin with butter & line with baking paper that is 3cm higher than the sides of your baking tin.
Place walnuts into Tm bowl. Pulse x 2. Set aside.
Place roughly chopped carrots into TM bowl. Chop sp5/3sec. Set aside.
Place sugar into Tm bowl. Mill 10sec/sp9
Place butterfly in Tm Bowl
Add macadamia oil & eggs to sugar. Mix sp4/2min
Remove butterfly
Add GF flour blend, GF baking powder, xanthan gum, bi carb soda, cinnamon, cloves. Mix Sp 4/10sec
Scrape down sides of TM bowl
Add grated carrot & walnuts Mix Sp4/5sec
Scrape down sides of TM bowl repeat if necessary.
Spoon mixture into prepared baking tin.
Bake in oven for 1hr 10mins or until skewer comes out clean
Stand for 10 minutes before releasing tin.
Turn onto wire rack to cool completely.
Place sugar into TM bowl. Mill 10sec/Sp9
Add softened cream cheese, milk & vanilla paste.
Mix Sp3/15sec. Scrape down sides of bowl
Mix Sp3/15sec and repeat if necessary to achieve desired consistency.
Spread frosting over cooled cake. Enjoy!!!

I use Quirky Jo's recipe from her recipe book for GF flour or visit her blog for GF flour instructions. You could also use preblended GF flour.

Thanks for this recipe, it's so moist. I just used a bought GF flour mix, and a mixture of olive, coconut oil and nuttlex in place of the macademia oil. I reckon I'd add a little more spice next time. Lactose free in this house, so I just did a Buttery Nuttlex buttercream and added some lemon juice which gve it that cream-cheese zing. Perfect for the top. Will definitely make again - it's good to have recipes where all the incredients are staples.
This is delicious. I didn't have macadamia oil so just used rice bran, still tasted great

Awesome recipe! Made it a few times now and everyone loved it.
I made this cake for a morning tea and it was devoured! I am also diary intolerant so used the lactose free cream cheese and milk to make the icing. With definitely be making this one again!

Yum! will be making again. My husband asked "are you sure it's GF it tastes normal?" I used white wings GF flour mix, didnt have cloves and had assistance from a 2yr old and it worked out perfect! Thank you
