Ingredients
Gingerbread Men
- 120 grams Butter
- 100 grams brown sugar
- 130 grams golden syrup
- 1 egg yolk
- 1 tablespoon ground ginger
- 2 teaspoon cinnamon
- 1.5 level teaspoon mixed spice
- 1 teaspoon bicarb soda
- 370 grams plain flour
Icing
- 1 egg white
- 150 grams Icing

- Place butter, sugar, syrup and spices in TM bowl. Mix 5 mins, 50 degrees, speed 2.
- Add egg yolk, mix 3 seconds, speed 3.
- Add flour and bicarb soda and mix 10 seconds, speed 5.
Knead 2 mins on interval speed to form a soft dough. - Press dough into a disc and cover with cling wrap to rest in fridge 30 mins.
- Roll out dough on floured surface to 4mm thickness and cut out shapes.
- Bake 180 degrees, 10 mins until golden.
- Using butterfly, add egg white. Mix 3 mins, 50 degrees speed 4.
- Add icing sugar though hole at speed 4.
- Add to zip lock bag and pipe onto men when cool.

Can use dough to form any shape. Christmas stars etc
This recipe was adapted from someone on this forum a few years ago! I cant find them to acknowledge them but its a never fail recipe so thankyou.

Very, very, nice.
I've made this recipe several times now and the most recent I decided to double the ingredients.
1) Thermi struggled with volume....therefore don't recommend.
2) Left in fridge overnight to rest, whereby the mixture was quite hard when I wanted to roll & bake. Because of my impatience I popped the dough into the microwave to soften. This changed the texture and rolling was not as smooth.... therefore don't recommend.
3) Any left over icing, pop into a zip lock bag and freeze for your next delicious batch, keeps well.

Nice consistency to dough. Quite cinnamon-y... if you like cinnamon this is a nice flavour.
