- 325 grams plain flour
- 225 grams Butter, Unsalted cold
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon iced water
Filling
- 6 eggs
- 200 grams cream, Thickened
- 100 grams Milk
- 4 Bacon rashes diced
- 10 cherry tomatoes, Slices
- 150 grams cheese, Grated
- 0.5 teaspoon Nutmeg, Ground
- to taste Salt and pepper
- 20 grams oil

Add flour, butter and salt (and sugar if desired) into mixing bowl and mix on speed for for 15 seconds. Add water through top hole while mixing for a further five seconds. Use knead function until dough comes together.
Remove from mixing bowl, mould into a ball, wrap in glad wrap and refrigerate for 5 to 10 minutes. Then roll out to desired size and thickness.
Line a greased quiche tin with pastry, trim edges and let rest in fridge for at least 30 minutes.
Preheat oven to 180 degrees, prick pastry base with a fork and blind bake in oven for 15 mins with paper and a further 10 min without. Cool while making filling.
Place in mixing bowl and chop speed 5 for 4 seconds. Scrape down sides of bowl, add oil and bacon and sauté for three minutes, 100 degrees, speed 1. Drain, and place over pastry shell. Top with sliced tomatoes.
Place eggs, milk, cream, salt, pepper, and nutmeg in mixing bowl and mix for 20 seconds on speed 4. Add cheese and mix speed 1 for 5 seconds.
Pour into pastry shell, sprinkle with some extra cheese and bake for 30 minutes at 180 degrees until golden brown.

Tip
Pastry recipe makes more than enough. The colder the butter, the better so freeze for 15 mins if time permits.
Omit the sugar if desired from pastry. Can use same recipe for sweet pastry dishes also.

The first step of the filling. Place what in the bowl? I can't figure out what it could be as there doesn't seem to be anything unaccounted for in the rest of the recipe.
I think the pastry ingredients may need a slight tweak. Made this today in accordance with the recipe but the pastry was super crumbly and too "short". It only took a slight movement of the blind cooked pastry and it fell off the edge of the flan case. Definitely needs less butter.
Tasted nice but just didn't hold togther at all.
Also needed to double the baking time of the wet ingredients as still super wobbly at the end of the recipe cook time.
Tasty outcome but recipe needs a little tweak!
I made this tonight very tasty BUT the amount of butter used made the pastry very sticky and when cooked it was very crumbly. Are you sure this is the right amount of butter? It is a lot
This was a hit, the pastry won accolades by guests for lunch with salad.
I changed filling, making it more omlette like, with cheese, bacon, onion - brown and Spring, along with tomatoes. It was delicious, but, took an age to cook. I increased temp, to 200 for 40 mins and it still needed a bit longer.
There is no,speed for 1st step, so, I did speed 5 for 15 seconds, on TM 31, which worked well.
Note to self;-
Use all pastry, make it a bit thicker and poke ends over quiche pan, as it shrunk a bit.
Allow a lot longer time, start at 8am for lunch.
