Ingredients

Base

  • 250 g sugar
  • Rind of 1 Lemon
  • 250 g Butter, Chopped
  • 4 eggs
  • 300 g plain flour
  • 2 tsp baking powder

Streusel top

  • 350 g plain flour
  • 250 g sugar
  • 250 g chilled butter, Chopped
  • dash vanilla extract

Recipe's preparation

    How to:
  1. Preheat the oven to 180°C
    Grease/line a large slice tray.

    Base:


    1. Blitz the sugar and lemon rind 10secs/sp9

    2. Add the butter and beat 50secs/4

    3. Add the eggs, flour and baking powder 20/4. Scrape and repeat.

    4. Spread into prepared pan and sprinkle evenly with clumps of Streusel.

    Bake for 45+ mins or until cooked when tested.

    Streusel topping:

    1. Combine all ingredients in the Closed lid"Closed lid" 30-40secs/sp4.5, until clumps form.

Tip

This cake brings back such fond memories of my dear old Mum. I can so remember the aroma of this delicious cake wafting from our kitchen. Everybody loves it!

    I made this today for the first time and it didn't disappoint. I did reduce sugar to 200gr for both the base and topping and it was still plenty sweet enough for my taste. I was a little unsure about tin size as I only had a medium sized slice tin but worked out fine, although I had to increase cooking time by about 10 minutes. This will definitely be a new favourite in our household.
