Ingredients

Short Notice Slice

  • 1 heaped tbsp honey
  • 3 heaped tbsp butter (about 90gms)
  • 130 g self raising flour, (1 cup)
  • 1 egg
  • 50 g -100gm raw sugar, to taste, (2/3 cup)
  • 50 g desicated coconut, (2/3 to 3/4 cup)
  • 140 g mixed dried fruit (see tip), (1 cup)

Recipe's preparation

    Short Notice Slice
  1. Pre-heat oven to 180 C.

    Line a slice tray with baking paper. Set aside.
  2. Place honey and butter into mixing bowl and cook 3 min/50 C/speed 3.
  3. Add the rest of the ingredients, except dried fruit, and mix 20 sec/speed 4 - 5.
  4. Add fruit and mix 10 - 20 sec/Reverse/speed 3 until combined.
  5. Wet hands and spread slice mix onto tray, pressing down where necessary to compact.

    Bake for 20 minutes only.
  6. Leave in tray to cool and then slice into approx. 5cm squares, or as desired.

    Slice will continue to harden as it cools.

Tip

Any dried fruit (e.g. craisins, sultanas, mixed fruit, apricots, dried peel), nuts (e.g. almonds), grated vegetables (e.g. zucchini) or museli mix can be used for this slice. Whatever is in the cupboard and your imagination are the only limits!

    My family luv this slice, I use whatever I have in cupboard
    first time I used all flaked almonds & second time I used half almonds & half sultanas.

    Quick and easy recipe, loved it. I doubled recipe and baked for 30 minutes in a slice tin. I used sultanas and almonds that's all I had in the cupboard, but simple is good.

    Fantastic recipe, l used a Slice tin, but think l might double it next time. But very Tasty

    Really enjoyed this slice - made mine with dates, dried figs and sultanas.  Didn't think of adding walnuts as another person did but will try this out next time.  Found it a bit thin (in my slice tin) so will either use a square tin next time or increase to 1.5 times.

    Thank you. This is great. I just used sultanas. Cooked, sliced, wrapped in individual pieces and put in the freezer for school lunches.

    My Mum and Dad (my Babysitters) are away.  I've got to work.  Hubbie has to work.  Friend has offer to look after my 2 kids along with her 3.  Thought of everything I needed to pack for my kids, along with rose plant to say thanks...then thought...I need to send afternoon tea for everyone...this is perfect!!

    Delicious. followed advice of others and made 11/2 quantity and it filled beautifully in the lamington tray. I only used 80g sugar and this was sweet enough. I added 4 dates and the rest in sultanas   Also added 60 g walnuts. Will make this many times. Thank you.  Cooking 7 tmrc_emoticons.)
