Ingredients

To make

  • 70 g Butter - cubed
  • 140 g white sugar
  • 60 g brown sugar
  • 1 tsp vanilla powder/extract
  • 1 egg
  • 340 g skimmed milk
  • 200 g all purpose flour
  • 170 g spelt flour, wholegrain flour as an alternative
  • 1 sachet baking powder
  • zest From One Lemon
  • 1 tbsp chia seeds
  • 100 g walnut pieces

Recipe's preparation

  1. While making the mix, preheat the oven to 180 degrees and place patty cases into a muffin tin. This will make 12 muffins.

     

    Add walnuts and blitz on speed 5-6 for 5 sec.Remove and set aside.

    Place butter into bowl. Blitz on speed 5 for 1 minute. Scrape down.

    Add sugars(brown and white)and vanilla extract to bowl. Blitz on speed 5 until pale. Scrape down.

    Add all remaining ingredients, except chia seeds (including the walnuts). Blitz on speed 5 until just combined. Do not over mix the batter.

    Pour into patty cases and spread the chia seeds on top. Bake for 25 minutes or until golden on top.

     

Tip

This is a healthy and nutritious version of aromatic muffins. Use unwaxed lemon zest or no zest at all.
