Ingredients
Biscuit base
- 1 lemon
- 115 grams unsalted butter, cubed
- 150 grams caster sugar, made in TM
- 250 grams plain flour
- 2 teaspoons baking powder
- pinch salt
- 1 egg
- 100 grams Milk
- Lemon curd, made in TM
Lemon butter-cream filling
- 200 grams icing sugar, made in TM
- 115 grams unsalted butter, cubed
- 2 tablespoons freshly squeezed lemon juice

Preheat oven to 180C. Line 2 large cookie trays with baking paper and set aside.
Grate lemon peel for 15 seconds on speed 8.
Add butter and sugar to TM bowl, mix for 1 minute on speed 3.
Add flour, baking powder, salt and egg. Mix for 1 minute on speed 3-4 until well incorporated.
Pipe (or spoon) 20 mounds of mixture onto prepared baking trays, ensuring you leave enough space between each to allow for spreading.
Bake for 10-12 minutes until just firm to the touch.
Allow to cool for 5 minutes then carefully transfer to a wire rack with a palette knife and allow to cool completely.
Add butter and lemon juice to TM bowl and beat for 1 minute on speed 4. Add icing sugar and continue to beat for a further minute on speed 3 until light and fluffy.
To assemble, spread or pipe the buttercream on the flat side of half of the biscuits and the lemon curd over the other half of the biscuits. Sandwich the biscuits together pressing down gently.
Decorate with whatever your wish. I have used little flowers which I made out of fondant.

These are really delicious, thanks for the recipe! I put the dollops too close together on the tray so when they spread in the oven a heap of them merged into each other, I was munching on these ones still warm, yum!
