Ingredients
Cornflake Base
- 60 g Cornflakes, I used crunchy nut
- 75 g raw sugar
- 170 g Self Raising Flour
- 60 g moist coconut flakes, (shredded is fine)
- 145 g Butter, cubed
Marshmallow
- 220 g raw sugar
- 75 g cold water
- 1.5 tsp powdered gelatine
- 75 g Boiling water
- 2-4 drops food colouring of choice
- 2-4 drops flavouring if wanted
Decorations/Sprinkles if you want to use

Preheat oven to 180 degrees
Line a 20x20cm square cake tin with baking paper
Place all of base ingredients into bowl
Blitz on speed 5 for 30 seconds.
Pour and press into tin.
Bake for 15-20 minutes until slightly golden.
Allow to cool.
Place empty bowl on lid and weigh in 75g boiling water into bowl. Set aside
Add sugar into bowl and blitz on 9 for approx. 5secs
Add whisk into bowl in correct position then add cold water.
Beat on speed 3 for 3mins.
While combining add the glatine to boiling water in the small bowl and whisk to dissolve completely.
Once the 3 minutes is up - add the gelatine mix and colouring/flavour to the bowl.
Continue on speed 4 for 3 minutes
Pour marshmallow mixture over the base.
Sprinkle with decorations of choice if wanted and allow to set for 2 hours or so in fridge or room temperature.
You can use confetti sprinkles, toasted coconut, edible glitters

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
