Ingredients
Muffins
- 55 g Pitted medjool dates
- 2 Apples, Peeled, Cored & Quartered
- 40 g pecans
- 3 Ripe Banana's, Quartered
- 1 egg
- 60 g Maple syrup
- 60 g sultanas
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 310 g plain flour
Icing
- 20 g pecans
- 150 g raw sugar
- 1 tsp cornflour
- 120 g Philadelphia cream cheese
- 10 g Milk

Use silicon muffin liners for this recipe - If you use paper (like in photo), you will loose half of your muffin when you try and remove the paper.
Pre-Heat Oven to 180 degrees celsius.
Add dates, apples and pecans to TM Bowl. Lock Lid and Turbo 3-4 times, pressing Turbo briefly each time. Scrape down sides of bowl.
Add Banana's. Lock Lid and Turbo for 'just' one second.
Add Egg, Maple Syrup, Sultana's, Baking Powder, Cinnamon and Plain Flour to TM Bowl. Mix for 5 seconds / Speed 4.
Give a final stir through with spatula.
Line a muffin tray or two with silicon muffin liners.
Spoon mixture into muffin liners. About half fill each muffin case.
Bake for approximate 30 minutes or until an inserted skewer comes out clean.
Leave in muffin tin to cool for a few minutes before tranferring onto a wire rack to cool completely before icing.
Do not ice until muffins are completely cool.
Place pecans into TM Bowl. Blitz once on turbo. Set aside in separate bowl. No need to wash bowl. Add sugar & cornflour to TM Bowl. Blitz speed 9 / 10 seconds. Add cream cheese and milk. Mix at speed 5 / 20 seconds.
Place blobs of the icing mixture onto each muffin. Top with reserved pecans
