Ingredients
Pastry
- zest l lemon
- 60 g Butter
- 15 g sugar
- 170 g SR flour, (or 170g plain flour + 1 tsp baking powder)
- 1 egg yolk
Filling
- 240 g Milk
- 230 g sugar
- 100 g lemon juice, (2 lemons)
- 2 whole eggs
- 1 egg white, (leftover from pastry)
- 15 g cornflour

Preheat oven to 180C.
Place lemon zest and sugar into TM bowl and grate for 20s at speed 9.
Place all other pastry ingredients into TM bowl. Mix for 5s at speed 6.
Place dial on "Closed lid" , knead for 30s on "Dough mode" while pouring 3 tablespoons of water into the bowl through the lid.
Turn out onto thermomat and roll using a lightly floured rolling pin and place in a pie dish (alternatively you can just press the pastry into the pie dish).
Bake for 15 minutes at 180C or until lightly golden.
Place all ingredients into TM bowl and cook for 7 minutes at 90C on speed 4.
Pour into the pastry case and allow to cool completely before cutting.

Tip
Make a lemon passionfruit tart by adding the pulp of 2 passionfruit and reducing the milk by 40g.

A beautiful dessert!
I made this yesterday with the following adjustments as per the comments and my own preference:
- omit lemon zest
- 3 tablespoon of lemon juice instead of water.
- soy milk instead of milk
- 3 whole eggs and omit the egg white
- 200g cane sugar milled.
- more lemon juice for the filling for the extra tartness.
Also made the 10 minute meringue frosting to balance the tartness. Omgosh to die for!
My guests devoured it plus they were so amazed with the blowtorch. So pleased as it was my first time too. Great way to use the lemons.
Nice, although not a fan of the lemon zest in the crust. Other than that quite nice. Needs to be served with something to break up the tang, like whipped cream, or meringue swirl on top 😀

Things to try for next time: use lemon juice instead of water for the pastry. Cream instead of milk for the filling. Add more lemon juice in the filling.

Made this today for guests. Used passion fruit with the lemon and made my own biscuit pastry , delicious , everyone most impressed.

I made this for the first time to take to a friends for a BBQ. Got great reviews. Very easy to make. I usually don't bother making pastry but this was so simple. I even made another base - the same as this and filled with caramel for those that don't like lemon. Next time I think I will add a little more lemon - I like a real tart lemon flavour
