Ingredients

  • 110 grams raw sugar
  • 100 grams brown sugar
  • 150 grams Butter, cubed
  • 1 egg
  • 1 teaspoon vanilla paste ( or seeds from a vanilla pod)
  • 150 grams spelt flour
  • 5 grams baking powder
  • 170 grams oats
  • 100 - 150 grams choc chips ( milk, dark or white)

Recipe's preparation

    to make the dough
  1. Heat Oven 170 degrees

    Mill both raw and brown sugar for 7 sec on sp 9

    add cubed butter and mix 1 min speed 7, scrape bowl down to ensure maximum mixing

    Add egg and vanilla and mix 1 min speed 7, scrape bowl down as needed

  2. Add spelt and mix for 10 sec speed 6

    once roughly mixed Dough mode"Dough mode" for 2 min

    add oats and choc chips Counter-clockwise operation"Counter-clockwise operation" spd 4, use spatual to help combine ingredients if necessary

  3. make spoonfuls and place on lined oven tray,

    baking for 10 - 15 min

    baking time will vary dramatically depending on the size of your cookies. Larger one s will take longer.

Tip

kneading is the secret to a nice cookie.
if possible make ahead and allow the dough to rest in the fridge for a few hours or over night - however still nice if kids want you to bake them straight away

    Yummy!  A lovely hearty biscuit. Don't forget to add the baking powder like I did. It's mentioned in the ingredient list but not in the method. I also used quinoa flakes instead of oats. Will make again! Love
