- 1 Medium Carrot
- 3 eggs
- 30 grams grass fed butter
- 50 grams Raw Honey
- pinch Himalayan salt
- 1/2 teaspoon vanilla extract
- 1/4 cup coconut flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/2 teaspoon baking soda
- 80 grams pitted dates
- 50 grams walnuts

Preheat to oven to 205 degrees
Place carrot in "Closed lid" , shred speed 6/5 seconds. Set aside.
Without cleaning bowl, place eggs, butter, honey, salt and vanilla, blend speed 7/ 10 seconds.
Add coconut flour, cinnamon, ginger and baking powder, mix speed 3/ 15 seconds. Add dates and walnuts, mix speed 4/10 seconds.
Scrape down sides and add carrot and "Counter-clockwise operation" speed 4/3 seconds. Scrape sides and repeat.
Dish evenly into 6 muffin tin tray (I used paper muffin cases also), bake for 16 to 25 minutes (depending on oven...

Is it baking soda or baking powder?? In the Ingredient list it says baking soda, but in step four it says baking powder.
I made these a few times they tasted great..but were a bit dense but taste trumped over this...

Wow, the best muffin I have ever tasted...love it!
Husband on a SCD Diet, and these were perfect for him. They taste just like a mini carrot cake, moist and extremely difficult to stop at just one! Needed slightly more cooking time than 25 mins.

These were nice and moist and easy to make. They didn't have a big carrot taste to them so next time I might add more carrot and grate it a bit less. I baked mine at 180degC and they turned out fine.
