Ingredients

Makes 1 Loaf

  • 110 grams sugar, I use Brown but you could use rapadura or white
  • 110 grams Butter, (about 1/2 cup)
  • dash vanilla extract
  • 2 eggs
  • 260 grams flour
  • 180 grams plums, diced (about 1 cup)
  • 3/4 Cup, Vanilla yoghurt
  • 1 tsp baking powder
  • 1/2 tsp Bi Carb Soda

Recipe's preparation

  1. Preheat Oven to 180c


    Weigh in Sugar and mill 10 sec speed 9


     Add butter, vanilla eggs and whizz for 30sec speed 6


     Add yoghurt  flour baking powder and bi carb and whizz for 20 sec speed 6


     Add in plums and mix for 10 sec, reverse speed, speed 4.


    Pour into greased and lined loaf tin. Bake for 45 mins to an hour.


    Rest in pan for 10-15 mins and then remove and enjoy Smile


     

Tip

Any stone fruit would work.

This was adapted rom a recipe I found on food.com. The original recipe advises to bake for 45 min. But in my oven I find that I have to turn oven down to 170 after 45 mins cover with al foil and bake for a further 15 mins to ensure centre is cooked.

    Oh My Gosh!!! This bread is fantastic. I decided to make it to use up the last of the plums. I would never have thougnt it would taste so good. Not sure how it will freeze, but going to give it a go. Will be nice with icecream, custard, cream, you name it. A lovely plum coulis on top would be great too. Planning to have a slice here and there for breakfast with fruit & yoghurt, hence the reason I'm going to try freezing it. I thoroughy recommend this recipe. Give it a go.Smile

    Cooking 1  Hi just printed your recipe but have noticed yogurt in the preperations but is not in the ingredients list??? can you please cheak it out as would like to try recipe! thanks
