Ingredients
Pie Crust and Filling
- 50 g sugar
- 1/2 piece vanilla bean
- 200 g Cold Butter, cubed
- 380 g plain flour
- 4 teaspoons ice water, might use more or less depending on how dough forms
- 140 g brown sugar
- 1 tsp cinnamon ground
- 1/4 tsp cloves ground
- 1/4 tsp nutmeg ground
- 1/2 tsp salt
- 500 g roasted, mashed and cooled pumpkin
- 280 g evaporated milk
- 2 piece eggs

FOR THE CRUST
1) Place sugar and vanilla bean into bowl and mill 10 sec/speed 10
2) add butter and flour and mix10 sec/speed 6 until it looks like fine bread crumbs
3) Add water through lid by teaspoons until the dough comes together. Do this on interval speed. Make sure you do not over mix. Should only take about 4 tsp water
This should make 2 pie crusts. Place the dough onto a Thermomat and roll out half to fill a pie pan. Set aside remaining dough to make another pie or wrap in cling wrap and freeze for another day.FOR THE FILLING
Place all ingredients into mixer and mix 15sec/speed 4
Pour into prepared crust
Bake pie for 15 minutes on 200 degrees fan forced. Lower temp to 170 and bake for an additional 50 minutes or until knife inserted into centre comes out clean.
Chill pie completely before serving. Serve with vanilla ice cream or a dollop of fresh cream

Great recipe, easy to follow. I substituted mixed spice for the ground cloves
Yum!
We made this with gluten free flour and mixed spice instead of cloves. It was delicious! We did find it was cooked after 35 mins at the 170 temperature (rather than 50 mins as suggested)
