Pumpkin Walnut & Raisin Muffins
- 250 g SR flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 level teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 450 g pumpkin, puree
- 80 g Butter, melted
- 120 g Milk
- 100 g brown sugar
- 50 g raw sugar
- 2 eggs
- 1 teaspoon vanilla
- 50 g walnuts, halved
- 50 g raisins

Place butter into "Closed lid" and melt for 3 mins at 80 until completely melted, set aside
Place eggs into "Closed lid" and beat for 10 secs on speed 2
Add puree pumpkin, melted butter, milk, sugars and vanilla into "Closed lid" mix for 20 secs speed 4
Add remaining ingredients except walnuts and raisins and mix for 20 secs speed 4 (don't over mix)
Add walnuts and raisins and mix 10 secs "Counter-clockwise operation" speed 4
Line 12 cup muffin tin with paper liners and fill with batter to approximately 3/4 full and cook 200 C for approximately 40 mins
Tip
Can also be served warm with custard or cream

This sounds lovely but I am unsure if you mean cooked or uncooked pumpkin puree. Could you please clarify this for me?
