Ingredients
Carrot cake
- 280 g carrots, peeled and cut into chunks (I love purple ones!)
- 130 g Rapadura Sugar or brown sugar
- 3 eggs
- 150 g oil, (I use grapeseed)
- 1 tsp vanilla essence
- 1 tsp baking powder
- 1 tsp bicarb soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 220 g plain flour or spelt flour
- 50 g walnuts, (optional)
Cream Cheese Icing
- 250 g cream cheese
- 60 g Butter
- 120 g icing sugar
- 1 tsp vanilla essence

Preheat Oven to 150C. Line an 8" round cake tin or prepare 18 cupcakes cases.
Put carrot into TM bowl. Chop 1-5 seconds on speed 5 depending on how finely chopped you like it. Set aside.
Put sugar, eggs, oil and vanilla into TM bowl and mix 5 seconds speed 4.
Add remaining ingredients including carrots and mix 5 seconds speed 4. Scrape down sides and mix 2 seconds speed 4.
Pour into cake tin or cupcakes cases and bake 15(cupcakes) or 45(cake) minutes at 150C.
Leave to cool in tin for 10 minutes then cool on a wire rack.
Place all ingredients into TM bowl and mix for 10 seconds on speed 4. Scrape down sides and mix for 10 seconds speed 4.
Pipe or spread icing onto cool cake/cupcakes.

I made these into cupcakes, i cooked them for a bit longer than the 15min i would say 20-25 would be better. They were very tasty and i made the icing to go on top (i had chocolate philly though it was a nice touch). I've not tried purple carrots before, it still tasted like carrot cake but had something else to taste was seemed to add to the flavour
