  • 250 g fresh cream
  • 250 g Dark Brown Sugar, You can also use granulated
  • 350 g Butter
  • 10 g sea salt

Recipe's preparation

    Method
  1. Chop your butter into small blocks if it's frozen.  Place all the ingredients into the TM bowl and cook on 80C, speed 1 for 7 minutes.

    Combine the butter to the sugar by mixing for 10 secs /speed 5

    Pour into a shallow or aluminium bowl - place into the fridge for at least 4 - 5 hours (or longer)

    Put half the mixture back into the Thermomix & mix well for 20 secs / speed 3 until the caramel is light in colour - place into a container & do the other half

    Cook for another 3 minutes, speed 3-4. Sauce will thicken on standing.

Tip

Once the mixture comes out the fridge - If the mixture looks like it's curdled, you need to continue mixing it.

 

You can use as a filling for Macarons, in a cake or cupcake

    Really don't like leaving negative feedback, but this recipe is a far cry from rich delicious Caramel Filling achieved with stove cooked sugar. This caramel is very bland and does not set properly. Disappointed. Waste of ingredients.

    I followed this recipe every step but it didn't thicken anywhere near enough to use for macaron filling, which is what I wanted it for. It would make a good pudding sauce. I'm thinking if I didn't use the last step where you re cook it, it may have been ok but not sure. Flavour was ok though
