Ingredients
Muffins
- 3 eggs
- 180 g sour cream, * i used a 200ml container
- 1 tsp Vanilla Bean Paste, or extract
- 100 g Rapadura Sugar, or substitute
- 250 g Self Raising Flour
- 80 g chocolate chips
- handful extra choc chips for decorating

I'm cooking this todayRecipe's preparation
1. Pre heat oven to 180 deg.
2. Add eggs, sour cream, vanilla and rapadura to TM"Closed lid" and beat - 30 seconds/speed 5.
3. Add flour and mix - 10 seconds/speed 4.
4. Use a spatula to mix through choc chips, and spoon evenly between 16 patty cases (or silicone cases).
5. Add a few extra choc chips to the top of each muffn and bake for 15 min or until golden.

Tip
I choose to use rapadura sugar which is organic and unrefined. You can swap it for raw or caster sugar if you like. I buy my rapadura from 2brothersonline. They're cheap and fast!

Nice recipe! I actually only added 30g sugar and then also out in one banana mashed. Very tasty
Great recipie. I added all ingredients together and mixed for 30sec speed 5 and they still turned out well. Choc chips were more like speckles instead of chips though.

I had to use up some sour cream in our fridge, and this was a great way! They were really delicious and absolutely beautiful warm out of the oven.
Fabulous! I substituted the sour cream for full fat Greek yoghurt & used coconut sugar. A big hit!
