Ingredients
Sourdough Chocolate Chip Banana Bread
- 150 g Coconut sugar
- 115 g Butter, unsalted, make in your Thermi
- 285 g Ripe banana
- 225 g Sourdough starter, unfed, or discard
- 1 egg
- 1 tsp vanilla extract
- 1.5 tsp baking soda
- 215 g flour, all-purpose, spelt, wholemeal - your choice
- 1 tsp cinnamon
- 0.5 tsp salt
- 100 g chocolate chips, of your choice
- 100 g Nuts, chopped

- Preheat oven to 180°C. Line a loaf pan/bread pan with parchment and set aside.
- Place sugar and butter into mixing bowl and mix 1 min/speed 3.
- Add bananas, starter discard, egg and vanilla and mix 20 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add flour, baking soda, cinnamon and salt and mix 20 sec/speed 5.
- Add chocolate chips and/or nuts, fold in with spatula to combine and transfer mixture to prepared loaf pan.
- Bake 50-60 minutes (180°C), until a toothpick inserted into center of loaf comes out clean. Let cool completely before serving.

You can use sourdough discard straight from thee fridge, or unfed sourdough starter - both work great. If you want to use normal sugar, use 215g instead. Use flour of choice, I normally go with either wholemeal spelt, or light rye. Alternatively you can use almond flour, or even coconut flour.
Sprinkle loaf before baking with a bit of sugar and some slithered almonds.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
