Ingredients

Sourdough Chocolate Chip Banana Bread

  • 150 g Coconut sugar
  • 115 g Butter, unsalted, make in your Thermi
  • 285 g Ripe banana
  • 225 g Sourdough starter, unfed, or discard
  • 1 egg
  • 1 tsp vanilla extract
  • 1.5 tsp baking soda
  • 215 g flour, all-purpose, spelt, wholemeal - your choice
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 100 g chocolate chips, of your choice
  • 100 g Nuts, chopped

Recipe's preparation

  1. Preheat oven to 180°C. Line a loaf pan/bread pan with parchment and set aside.
  2. Place sugar and butter into mixing bowl and mix 1 min/speed 3.
  3. Add bananas, starter discard, egg and vanilla and mix 20 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  4. Add flour, baking soda, cinnamon and salt and mix 20 sec/speed 5.
  5. Add chocolate chips and/or nuts, fold in with spatula to combine and transfer mixture to prepared loaf pan.
  6. Bake 50-60 minutes (180°C), until a toothpick inserted into center of loaf comes out clean. Let cool completely before serving.

You can use sourdough discard straight from thee fridge, or unfed sourdough starter - both work great. If you want to use normal sugar, use 215g instead. Use flour of choice, I normally go with either wholemeal spelt, or light rye. Alternatively you can use almond flour, or even coconut flour.

Sprinkle loaf before baking with a bit of sugar and some slithered almonds.
