Ingredients
- 140 g golden syrup
- 100 g Dark Brown Sugar
- 125 g cold butter, diced
- 250 g Self Raising Flour
- 1 tsp bicarb soda
- 1 tbsp ground ginger
- 310 g Milk
- 1 large egg
- 2 pears (peeled, cored and diced), You can used tinned pears also

Cook butter, golden syrup and sugar on 90c, 5 minutues, speed 2
speed 4, for 4-5 seconds (until dry flour is just combined, don't be tempted to over mix as this will keep it light and fluffy)
Add dry ingredients, milk & egg, mix
Add pear pieces, mix reverse speed 2, 3 seconds
Line a square cake tin with baking paper, add mixture and bake 180c for 60 mins or until cooked (test with a wooden skewer, it is ready when it comes out clean)
Cool in tin for 10 minutes, then cool on a wire rack until cold
Tip
This tastes amazing warm or at room temperature, and tastes great with a dollop of sour cream or natural yoghurt (made in the Thermomix of course!) Always tastes better the next day!!
For a richer flavour, use 70g golden syrup and 70g of treacle.

I am going to sub the Golden Syrup for Molasses - we love the bitter profile. As suggested i am going to add some grated fresh Ginger & i am going to use Firm pears

Hubby just loves pears and this cake has been devoured for dessert over the last few nights.

Really lovely recipe, quick and versatile.
I've made 4 times now. I've made as written, I've made a version of pear and vanilla (just no ginger and added vanilla), I've also made a version with tinned diced pineapple and vanilla (just no ginger and added vanilla). Every version has baked beautifully.
I'm about to make this for the 5th time, it's my goto cake recipe.
Great cake. Used extra ginger as others suggested. Also used Wholemeal SR flour really happy with outcome. Easy and makes kitchen smell amazing.

Our whole family loves this cake. I double the recipe in my TM5 and bake it in a 10" X 15" tin for a slightly thicker cake. I also add a tablespoon of pumpkin pie spice and top with cinnamon sugar before baking to add about more flavour.
I have made this cake 3 times now and it is almost 'inhaled' every time. I have made it with both fresh and tinned pears and it works fine with either. I do add 1 extra teaspoon of ground ginger as we love the taste of ginger but that is the only change I have made. Absolutely delicious recipe - thanks for sharing.i
