Ingredients

Cake

  • 250 g pitted prunes
  • 100 g Rapadura, (Or Brown Sugar)
  • 100 g honey
  • 200 g Rice Bran Oil
  • 4 eggs
  • 300 g spelt flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp mixed spice
  • 1 tsp ground nutmeg
  • 1 pinch ground cloves
  • 200 g natural yogurt

Recipe's preparation

  1. Blend Sugar, Honey, Oil and Eggs for 30 seconds / speed 5


    Scrape Down Bowl

  2. Add Flour, Baking Soda and Spices and mix 30 seconds / speed 5


    Scrape Down Bowl

  3. Add Prunes and Yogurt and mix 10 seconds / Speed 4


     


    Be Careful not to over mix

  4. Pour into a larged greased tin and bake at 180 degrees for approx 30 minutes or until firm to touch

Tip

Delicious served with thick yoghurt or cream

    Thanks for your comment.  No this isn't a sweet cake, if it needs sweeting up for your taste perhaps you could serve it with the carmel sauce from the Sticky Date Recipe in the EDC.   

     

    And yes 1 tsp of Baking Powder (I have fixed that up in the recipe now)

    This cake was a bit strange. It isnt very sweet and it has a funny baking soda taste about it. I wonder if it should be 1 teaspoon of soda not a tablespoon? Hopefully the kids will eat it up. I wont be serving for dessert as originally planned!!
