Ingredients
Triple Chocolate Muffins
- 180 grams raw sugar
- 150 grams Butter
- 370 gram buttermilk
- 2 eggs
- 310 grams Self Raising Flour
- 40 grams cocoa powder
- 1/2 teaspoon bicarbonate of soda
- 100 grams dark chocolate chips
- 100 grams White Chocolate Chips

Preheat oven to 200 degrees c. Place 18-24 paper cases in muffin tins
Mill the sugar for 4 seconds on speed 9. Set aside
Add the butter and melt for 3 minutes, 60 degrees, speed 2
Add all the remaining ingredients including the reserved sugar but not the chocolate chips and mix for 5 seconds on speed 5
Add the chocolate chips and mix speed 4, Reverse for 5 sec
Spoon the batter into the cases
Bake for 20 mins
Remove from oven and allow to cool for 5 minutes before placing on a cooling rack

These muffins are so light and fluffy. They're now my most favourite muffin recipe ever! I used milk instead of buttermilk and they still turned out perfect. These made 12 normal sized muffins and 24 mini muffins.
Amazing chocolate flavour. Moist. Kids loved them. I used full-cream dairy milk instead of buttermilk for simplicity. The kids helped make them. They were devoured! My only regret is they are not gluten-free (suggestions for the same amazing taste and texture with gluten-free changes most welcome!)
Funniest thing! I made these before school, sent the kids off with freshly baked muffins. I calmed home from work to find I forgot to re-add the sugar (opps) . Hubby came home and said ''Best muffins' so I Asked the kids & they all loved them, once I told them I forgot the sugar they did say 'yeah they were a little tough' 😂

Nice easy recipe. Turned out great. I didn't have buttermilk so just used full cream milk and they turned out fine.
