  • 125 grams Butter
  • 50 grams golden syrup
  • 20 grams water
  • 1/2 level teaspoon Bi Carb Soda, Baking Soda
  • 90 grams rolled oats
  • 160 grams plain flour
  • 220 grams Soft Light brown sugar
  • 40 grams desicated coconut

Recipe's preparation

    ANZAC Cookies
  1. Pre heat fan oven to 160°, line oven trays. 

  2. Weigh in butter, golden syrup and water into mixing bowl and heat 2 min / 60°C / speed 2. Scrape down sides of mixing bowl. 

  3. Add bicarb soda and mix 5 secs / speed 3

  4. Add rolled oats, plain flour, brown sugar and coconut and mix 10 sec / Counter-clockwise operation"Counter-clockwise operation" reverse / speed 4. Scrape down the sides and mix 10 sec /Counter-clockwise operation"Counter-clockwise operation" reverse / speed 4

  5. Scoop teaspoon size balls onto baking trays and flatten slightly, leave room for spreading While baking. 

  6. Bake for 10-12 minutes until golden brown. Remove from the oven and allow to cool for 5 minutes on the tray. Transfer to cooling rack to cool before storing in an airtight container.

    Yum! These are my perfect Anzac recipe. I reduced sugar to 150g as per other comments. I made 24 using my cookie scoop. I pressed down only a little so they're still a little chewy in the middle. Thanks for sharing!

    My go to for a quick biscuit recipe... I usually reduce butter slightly I reduce sugar to 150g and add 100 g oats all up . Makes up well as a double batch and cooked biscuits freeze well

    Delicious thank you! Great recipe. I reduced the sugar to 150g and it was still pretty sweet. I also placed them onto the tray as rolled balls - I did not flatten as I prefer a dome shape and it means they are a bit softer and chewy! Yum, yum!! A hit with the kids and the guests.

    Withh so many Anzac cookie recipes on offer, it's impossible to know which one to choose. I decided on this one and they were amazing. Very simple, I used a littlw less sugar, added a few sultanas and they were great, especially when eaten still slightly warm (about 15 minutes oiut of the oven). Just don't put them too close on the tray as they do spread out and join together.

    I have just taken a batch out of the oven. These look fantastic, smell delicious, are crunchy but not dry - the perfect Anzac. I only had 160 of brown sugar, but the taste is superb. Thankyou for the recipe.
