Ingredients

  • 250 g dark chocolate
  • 250 g Butter, room temp
  • 1 tablespoon instant coffee
  • 200 g water
  • 340 g plain flour
  • 30 g cocoa
  • 0.5 tsp Bi Carb Soda
  • 490 g sugar
  • 4 eggs, large
  • 2 tbsp EVOO (extra virgin olive oil)
  • 1 tsp vanilla extract
  • 150 g buttermilk
  • 1 heaped teaspoon baking powder

Recipe's preparation

  1. Preheat oven to 150c and grease and line a deep 23cm round tin if using (I make cupcakes)
  2. Place chocolate, into TM bowl and blitz for 5 sec, speed 8
  3. Add Raw sugar into TM bowl and blitz for 5 sec, speed 8
  4. Add butter, coffee and water and mix for 3 mins at 30c speed 2
  5. Add remaining ingredients - except eggs mix 30 secs sp 4-5
  6. Add eggs, mix for 45 sec, sp 3.5.
  7. Scrap sides and then another mix for 30secs sp 3.5
  8. Pour mixture into prepared pan or cupcake liners.
    For Pan- Bake for about 1 hour and 30minutes.
    For Cupcakes - Bake for 35-40mins.
    Insert a thin-bladed knife or wooden skewer into the centre of the cake to test whether it is cooked through.
  9. When cooked through, remove cake from oven, cover with a clean tea towel and allow to cool slightly in the pan. When the cake has cooled to touch- wrap in plastic wrap and refrigerate overnight until ready to ice.
  10. When ready to use - remove it from the pan. The top surface of the cake will probably have a crunchy crust, which you may wish to trim off. You can turn the cake upside down to give a flat surface for icing.
