Wendy's Spicy Pear and Banana Loaf
- 115 grams Butter
- 100 grams brown sugar
- 115 grams raw sugar
- 2 bananas, Roughly chopped
- 21/2 pears, Roughly chopped
- 75 grams Plain or vanilla yogurt, Use more if mix is too thick
- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons ground ginger
- 1 heaped teaspoon cinnamon (ground)
- 1/3 teaspoon Nutmeg (ground)
- 1 heaped teaspoon baking soda
- 370 grams SR flour, Use more if mix is too runny

- Prepare loaf tin and preheat oven to 170 degrees C
Weigh in butter and sugars to TM bowl
Cream 30 seconds, Speed 6
Add bananas and 2 pears to TM bowl (Reserve 1/2 a pear)
Blend 10 seconds Speed 7
Add yogurt, vanilla and eggs to TM bowl
Mix 10 seconds Speed 4
Add baking soda, spices and flour
Mix 20 seconds Speed 6
Scrap down sides of bowl and
Mix 10 seconds Speed 6
Fold in reserved diced pear by hand OR add it once mixture is in the tin and make sure it is covered by the mixture
Pour mixture into prepared tin
Cook in oven 60-75 minutes or until skewer inserted comes out clean
Allow to cool on rack when cooked
Keep in refrigerator
Tip
If mixture is too thick add more yogurt as the consistency will depend on how juicy the fruit is.
Likewise, add flour if mixture is too runny.
Should be the consistency of a cake mixture.
