cookie mix
- 60 grams Salted Pistachio Nuts
- 90 grams Butter
- 110 grams Brown Sugar.
- 110 grams white sugar
- 1 teaspoon vanilla extract
- 1 egg
- 230 grams plain flour
- 1/2 teaspoon baking soda
- 100 grams dried cranberries
- 160 grams White chocolate drops
Chocolate drizzle
- 150 grams White chocolate drops
- 20 grams Milk

Pre heat oven to 180*C and line two baking trays with baking paper.
Place the pistachios in the TMX bowl and turbo for 1 second. Pour into a small dish and set aside.
Place butter, and sugars into TMX bowl and combine for 40 sec/ speed 8. Scrap down the sides, add the egg and vanilla extract and mix together for 10 sec/ speed 5. Scrap down the sides.
Place in the flour and baking soade and stir for 30 sec/ speed 8, now add in the pistachios, cranberries and white chocoloate drops and mix on reverse for 1 min/ speed 6, using the spatula through the lid hole to aid in the mixing process.
Roll tespoon size balls of mixture and place on the lined trays and bake in the oven for approx 13 minutes until just turning a light golden colour. Remove from oven but allow to cool on tray for 10 minutes before transferring to a wire rack to completely cool.
Once biscuits have cooled make the White Chocolte drizzle by combining the chocolate drops and the milk in your TMX bowl and melting for 4 minutes/ 80*/ speed 5. Place into a glad back or piping bag and drizzle over cookies.
Serve and Enjoy.
Tip
Delicious even without the drizzle on top.
