Almond Milk
- 250 gram almonds, skin on
- 750 gram filtered water
- 1 Medjool date

Soak almonds in a bowl full of water with a pinch of salt for at least one hour or preferably overnight
Drain almonds and add to Thermomix with the filtered water and pitted date
Blend for 1min/speed 10
Strain through a nut milk bag
Store in the fridge

Tip
You can leave the date out if you prefer or if you like sweeter add more to taste. You can also add vanilla extract. Almond milk keeps in the fridge for 3-4 days. It settles so just needs shaking before use which is why it is handy to store it in a glass bottle or jar. It is worth buying a nut milk bag as the muslin I bought was not fine enough. I do not like shop bought almond milk but tried this at my customers home and was sold It is delicious in coffee.
