Coconut Cream
- 200 grams Shredded coconut, or desiccated
- 150 grams water

- 1. Place coconut into bowl and mill 20 sec / speed 9.
2. Add water and soak 5 mins.
3. Cook 3 mins /100 °C / speed 2.
4. Mix 1 min / speed 9.
5. Pour mixture into a nut milk bag or muslin cloth & drain into a heat proof bowl. Once cool, firmly squeeze to extract milk. Retain coconut pulp & see tips below.
Store in a glass jar in the fridge for up to 3 days or freeze.

Make your own Coconut Cream & add to you favourite curry, cocktail, dessert or baked goods.
Dry out the coconut pulp & mill it into coconut flour or add to protein balls.

This recipe makes 100mls. I was expecting it to make more. It's nice and thick though so I would make it twice, to get more cream if I were to make it again.
