Recipe's preparation

    For Paste, & ending with Extract
  1. Split all the pods in half scraping the beans into a separate bowl 

    place sugar in TM bowl 20sec speed 9

    Add water and cook 100degrees 6min sp4

    Add all the vanilla pods and the scraped out seeds to the TM bowl. With the lemon/lime juice. Then cook with MC OFF at 100 degrees 6min Counter-clockwise operation"Counter-clockwise operation" sp2 ( note:lemon is not for flavour, but to assist in not crystallising the mixture)

    Then scrape down sides and again with MC OFF mix for a further 7min Counter-clockwise operation"Counter-clockwise operation" sp 2 to allow to cool slightly and infuse.

    While this heavenly mixture is cooling, fill a bottle at least 500ml size 350ml of vodka, leaving 350ml vodka in the original vodka bottle, each will then have enough room for some pods to go in.

    After the 7minutes,  place 3-5 of the cooked pods into the bottles filled with vodka and seal. Place in dark cupboard for 8-12 weeks before use. Use in recipes calling for vanilla extract or essence.  You can decant into a smaller bottle once infused and Top up the main bottles with alcohol as required every 12 months or so using the same pods.

    The remaining liquid in your TM bowl is Vanilla Paste. Place this liquid and all of the pods into a well sealed jar or bottle, pour a small amount of the beany liquid into a very small jar, and use a teaspoon in your favourite recipes like custards, cakes and desserts for the extra special vanilla flavour with the speckle of vanilla beans. Or, as I have done, place intuitive 5-6 small sealable jars to give away. Leaving the pods and at least 100mls of paste in a "starter" jar. The main paste bottle or starter jar will intensify over time and can be topped up with a sugar syrup when needed (after approx 8-12 months)

Tip

Organic Vanilla Pods can be sourced online, I sourced mine from PNG (26 beans/pods) which has yielded 700 ml vanilla paste and 700ml Vanilla Extract. Comparing to supermarket prices, $10 for a 65g jar, this is very economical. 

Use 1/2tsp of paste in place of 1tsp essence in recipes.

I bought my 150ml jar from a cheap shop for $2 each.

    Help, im confused by the ingredients. Its the same written out twice. Do i need 25-30 pods for the two or 50-60 for the two?

    I followed the recipe exactly and found the resulting "Paste" to be very watery and much more that 700ml in volume. I am just now cooking the liquid a further 20 minutes to try to reduce it.

    question. My essence has been in dark cupboard now for 6 months and still smells of alcohol. Have I done something wrong.

    I would let it get to halfish and then topped up with 40mls...
