Ingredients
- 300 grams water
- 450 grams Bakers Flour or Bread Flour
- 2 teaspoon Yeast, or 15 grams fresh yeast
- 2 teaspoon salt
- 1 teaspoon sugar
- 2 teaspoon bread improver
- 15 grams oil
- 150 grams Cyndi O'Meara's Super Bread Mix

Place water into mixing bowl and heat 2 min/37C/speed 2
Add yeast, flour, salt, sugar, bread improver and oil mix 6 sec/ speed 6
Knead 6 min/"Closed lid"
Place in an oiled bowl and cover with cling film. Place bowl in a warm sink 1/2 way up bowl and cover with a towel - leave until doubled in size. This could take at least an hour - hour & half depending on weather.
Once risen, if dough still in mixing bowl knead 30 sec/"Dough mode" or knock back by hand.
Roll and shape to fit in tin. Spray with water and leave to rise in sink of warm water as before until dough reaches top of tin.
Place into a cold oven and set to 200C fan forced.
placing dough into a cold oven gives the dough a little bit more rise as the oven heats up
Cook 30 min, remove from tin and place back into oven for a few minutes for a crunchy crust.
placing a dish of water into the bottom of the oven will also help to give a crisper crust.

Super Bread Mix as per Cyndi O'Meara's recipe book "Changing Habits Changing Lives Cookbook" Page 53.
"To save time when making bread make up this dry mixture in advance. If you want to make up a small portion use a tablespoons of each instead of cups.
1 cup sesame seeds
2 cups organic raw sugar or rapadura sugar
1 cup sunflower seeds
1 cup maize flour
1 cup ground almonds
1 cup soy flour
1 cup linseeds
1 cup pumpkin seeds
1 cup besan flour
2 cups rolled oats.
Measure all ingredients into an airtight container, mix thoroughly and store in cool, dark place."
