Recipe's preparation

  1. Ingredients
    3 heaped Tbls - about 60 - 80g plain flour
    1 cup (250ml) milk
    pinch salt
    3 eggs
    1/2 teaspoon ground cinnamon
    1 teaspoon vanilla essence
    1 tablespoon caster sugar
    12 thick slices bread


    Method

    Put all above ingredients in the Thermomix Closed lid"Closed lid" and mix Gentle stir setting"Gentle stir setting" for 2 mins on Speed 2.5 then increase to speed 3

    Soak Bread in mix and fry in lashing of butter and drizzle with Maple Syrup.

Tip

I use a homemade sourdough from the cookidoo recipe.

Use Free Range fresh eggs if possible.

Use the very best Vanilla Extract you can afford, you can taste the difference.

You can easily omit the sugar - I do depending on what topping I am using.

You can make the mix the day to ensure the flour is absorbed completely and I store in my cake pen on the door of the fridge for ease. Then in the morning I will give it a shake and soak the bread in the morning and fry.

This Fathers day and I have done it before and know it works well, I am going to make on Saturday completely and then cool and store in fridge in a heat proof container.

Then in the morning just put it out of the fridge warm for a minute in the Microwave to take the chill out and then flash fry in the frypan to get that double cooked crispy crust and the fluffy soft inside. In a 1/3 of the time you will all be sitting at table enjoying your family time. xxx Kate
